Portulaca oleracea or commonly known as common purslane, pursley,
red root or verdolaga is a garden weed that is usually regarded as just that, a
weed. Actually purslane is a plant that is edible and has many health benefits.
Purslane has extremely
high levels of omega-3 fatty acids, a lot of amount of fiber, Vitamin A,
Vitamin C, iron, magnesium, potassium, calcium, copper and B Vitamins. It has
seven times more carotene than carrots, six times more Vitamin E than spinach.
Purslane is used in cooking and in herbal medicine. In
herbal medicine only the leaves and young shoots are used (it is picked before
it blooms). In cooking purslane can be
used fresh and cooked. It is used in salads, soups, stir-fried with other vegetables,
can be put in juices etc.
